Chicken Enchiladas with Creamy Green Chile Sauce (from allrecipes.com, but adapted)
12 corn tortillas
vegetable oil
3 cups of cooked, shredded chicken (just the meat)
12 oz cheese (Monterey Jack suggested)
1/2 c minced onion
1/4 c butter
1/2 c chicken broth
1 c sour cream
1 (4 oz) can green chiles, drained
1/3 c chives
sprinkle of cilantro
Preheat oven to 375.
Heat 2 T oil in frying pan. Fry each tortilla (separately) for 5 seconds on each side (to soften). Add oil as needed. Drain between layers of paper towels.
Divide chicken, 10 oz cheese and onion between the tortillas. Roll the filled tortillas up and place them in a baking dish, seam down.
Melt the butter in a sauce pan over med. heat. Add the flour and whisk until it begins to boil. Slowly add broth, stirring with a whisk until thickened. Mix in sour cream and chiles, heat thouroughly. Do not boil. Stir. Pour over enchiladas.
Bake in preheated oven for 20 min. Top with remaining cheese and bake 5 more min. Garnish with chives and cilantro.
Baked Apple Streusel
4 medium apples, cored and thinly sliced. (Peeled, optional)
3/4 cup brown sugar
1 t cinnamon
2 T lemon juice
1/2 c flour
1/2 c oats
6 T butter
1/2 c chopped pecans (or walnuts)
Preheat oven to 350
Stir together apples, 1/4 c sugar, 1/2 t cinnamon and lemon juice.
Pour into 2 quart baking dish.
Cut in flour, oats, 1/2 c sugar and butter to make crumbly mixture.
Sprinkle crumb mixture over apples. Sprinkle in pecans.
Bake 45 minutes.
